A women-led project born at high altitude, shaped by the work of Tanash Girma, an Ethiopian producer in the Sidamo region. Hand harvesting and natural processing on raised beds result in an elegant, harmonious coffee, with notes of marzipan, candied mandarin, and a delicate floral character.
Tanash Girma is an Ethiopian coffee producer working in the Sidamo region, in a high-altitude area where climate conditions and time play a key role in shaping the final quality of the coffee. Her farm covers approximately 1.9 hectares and is managed with care and direct oversight.
The Ethiopia Heirloom varieties grow at elevations between 1,900 and 2,100 meters, under the natural shade of Acacia and Cordia Africana trees. This environment promotes slow and even cherry maturation. Harvesting is carried out entirely by hand, with only fully ripe cherries selected, prioritizing quality over quantity.
The coffee is processed using the natural method and dried for approximately 18 days on raised beds, with daily monitoring to ensure consistency, cleanliness, and stability in the aromatic profile. A slow and meticulous process reflects a human, conscious approach to production.
In the cup, this single-farm coffee expresses the authentic character of Gedeb: elegance, natural sweetness, and aromatic precision. A single-origin coffee that tells the story of its territory through the work of a producer who oversees every step, from the plant to processing.
